It’s Rosé season and we are celebrating this storied delight with five tastings of luscious variation. Rosé is produced by introducing just a bit of color from the skin of red grapes. This method dates back to the earliest days of winemaking before extended maceration and deeper pressing of red grapes (used to produce today’s bolder reds) came into favor. The ancients were likely drinking wines that appeared very much like today’s Rosé.

Lively strawberry and red currant complimented with floral notes and crisp acidity

First Course

Domaine Pierre Martin | Sancerre Chavignol Rosé | France
Fresh red berries, jasmine, orange zest, fresh strawberries and pomoegranate
Pairing: Watermelon Salad
Fresh watermelon, cucumber, red onion, crumbled feta, fresh mint sprigs, toasted walnuts, cracked pepper. Tossed in a red wine olive oil vinaigrette.

Second Course

Schloss Gobelsburg | Scholosskellerei Gobelsburg Cistercien |  Rosé | Austria
White peach, wild strawberry a hint of violet and spice
Pairing: Peach Crostinis
Toasted baguette, whipped honey ricotta, grilled peaches, crispy pancetta, thyme, balsamic reduction.

Third Course

Ovum | Pink Salt | Rosé | Oregon
Cherry jam, green fig, candied red fruits and salted lemon
Pairing: Shrimp and “Grits”
Cheddar cheese creamy polenta, Cajun-rubbed shrimp, candied bacon, tomato relish, fresh scallions.

Fourth Course

La Spinetta | Il Rosé Di Casanova | Italy
Fresh lime, melon, crushed strawberries, fresh florals and brisk acidity
Pairing: Sesame Crusted Tuna
Seared sesame crusted fresh tuna, niçoise salad (green beans, grape tomatoes, black olives, hard boiled eggs, marble potatoes, spring mix, fresh herb vinaigrette), toasted almond crumble.


Fresh Fruit Tart
Shortbread crust, lemon curd filling, assorted fresh fruit, edible flowers, powdered sugar.
